GOOD FRANCE 2016: South African Edition | Where to eat in Durban?

 

Following the success of the very first Goût de France / Good France event in 2015, the French gastronomy celebration will be held again on 21 March 2016 in South Africa and the rest of the world.

Two restaurants in Durban are participating in Good France, Fusion World Food and Fusion French Café as part of the Francofête event! Organized by the Alliance Française of Durban and the eThekwini municipality, the Francofête/Human Rights Day Festival is a way to promote local and French talent in a festive atmosphere through the mediums of music, poetry and food.

The 5th edition of Francofête – Human Rights Day Festival will be held at Sutton Park (Morningside) on Monday 21st March 2016.

Good France lunches & dinners will be prepared by the three chefs from Fusion World Food and Fusion French Café and served in Sutton Park.

CHEF SHAUN SMITH
Fusion Cooking School / Fusion World Food Café (Durban)

Shaun Smith is Principal of The Fusion Cooking School, and Chef Patron of Fusion World Food Café in Durban. Previously a Regional Chef for Woolworths, Shaun started The Fusion Cooking School in 2002. Whilst always having a passion for food (and especially Global, Eastern, Asian and Oriental cuisine) Shaun also has a passion to upskill and develop people in the Art of gastronomy, teaching a quick, easy and healthy approach. Shaun has travelled and worked to promote a fun, healthy every-day lifestyle eating experience that draws on the very best of international global culinary styles.

 

CHEF ZANDRIA DE NOBREGA aka ZAZZ
Fusion French Café (Alliance Française of Durban)

 

Chef Zazz was trained at The Fusion Cooking School in Durban and qualified with a City & Guilds Certificate in Food Preparation & Cooking (Distinction), City & Guilds Diploma in Food Preparation & Culinary Arts (Merit) and a Fusion Diploma in Global Cuisine (Distinction). In 2013 she started lecturing at The Fusion Cooking School as well as continuing to work at Fusion World Food Café. In November 2015 Zazz was appointed by Executive Chef Shaun Smith to head-up the new Fusion French Café, which took over from Café Saint-Germain at the Alliance Française in Durban.

"My passion is pastry, wedding cakes, novelty cakes and desserts, although I still love working in hot kitchen. I also find canapés intriguing as I love to work with fine, delicate and intricate items." - Chef Zazz

 

CHEF CANDICE JORDAAN
Fusion World Food Café (Durban)


 

Chef Candice started her training in 2009 and completed her Diploma at The Fusion Cooking School. In 2012, she was appointed by Executive Chef Shaun Smith to head-up Fusion World Food Café and also started lecturing at The Fusion Cooking School. In 2013 she won the Goldcrest Young Chef of the Year and went to Thailand for two weeks as part of the prize, where she worked at the Blue Elephant Cooking School in Bangkok. The same year she was appointed to head-up the SA Chefs Young Chefs Club (YCC) in KZN, and was invited to join the regional SA Chefs (SACA) committee, of which she is still a member. Her passion is canapés and hot section, although she also enjoy the creativity of pastry.
